But this recipe actually has some healthy ingredients, like natural sweeteners (honey or maple syrup, depending on what you choose) and the peanut butter, which is loaded with healthy fats and protein. \n\nI’ve researched a number of ways to make cannabis-infused peanut butter. Then, you have your infused base that can mix really well with your peanut butter—store bought or homemade. \n\n\nRead your labels carefully if you’re buying peanut butter (or any other kind of nut butter if you’re allergic to peanuts) from the supermarket as some can be loaded with sugar and extra ingredients you may not want to consume. \n\nChoose the right kind of peanut butter and you’ll get tons of healthful ingredients, like:\n\n* Potassium\n* Fiber\n* Magnesium\n* Protein\n\nAnd coconut oil is a favorite ingredient of health-conscious folks because it may:\n\n* Help with weight loss\n* Aid in controlling blood sugar\n* Keep hearts healthy\n\nPlus, the fats in the peanut butter and coconut oil are important for the cannabis, too. Cannabinoids are lipophilic, meaning they have an affinity for fats. So, your body needs fat to absorb the healing cannabinoids in marijuana edibles. For that reason, none of your cannabis-infused foods should be fat free. \n\nI think this cannabis-infused peanut butter frosting is ideal for a number of dishes. It’s versatile and you can use it: \n\n* On muffins\n* As the filling for macaroons\n* Mixed into your morning oatmeal\n* Spread on toast or graham crackers\n\n### Choose Your Method for Infusing Peanut Butter With Marijuana\n\nNow you have two choices when it comes to making the peanut butter: the easy way and the hard way.\n\n#### The Easy Way to Make Cannabis-Infused Peanut Butter\n\nAll you have to do is stir your cannabis coconut oil into a jar of store-bought peanut butter:\n\n1. Take a jar of your favorite peanut butter and your cannabis-infused coconut oil \n2. Measure your oil, you want one dose per approximately 2 tbsp of peanut butter.\n3. Stir a lot\n\nYou now have cannabis-infused peanut butter. It will be a bit more oily than usual, but good peanut butter is a little oily and needs to be stirred when bought anyway. \n\nRemember to stir again if the oil settles, or risk some very strong and some not very strong areas of your edible. If the peanut butter is too oily for you then you can consider making stronger (more concentrated) coconut oil so you need to add less of it to the peanut butter.\n\n#### The Hard Way to Make Cannabis-Infused Peanut Butter\n\nFor this method, you make your own peanut butter and add in the infused coconut oil as you make it.\n\n* 15 oz roasted peanuts (you can do this yourself if you wish or buy roasted peanuts)\n* 1 tsp salt\n* 1 1/2 tsp honey\n* 12 doses of cannabis-infused coconut oil (yields approx. 1 1/2 cups or 24 tbsp; 2 tbsp makes up one dose)\n\nUse your own judgement for this, how much peanut butter do you want to be in a dose? If you like thick peanut butter on your toast, for example, maybe lower the oil. Or do you like a thin spread? Simply add more oil. It depends what you want to use your cannabis-infused peanut butter for, but this is a good, rough rule. \n\nRemember everyone is different when it comes to marijuana edibles. Listen to what your body says, and above all don’t forget: You can always add more, but you can’t add less.\n\n1.\tPut the peanuts, salt and honey into a food processor. \n2.\tBlitz it for one minute.\n3.\tScrape down the sides.\n4.\tProcess again for 1–2 minutes. I was inspired by her peanut butter frosting recipe when whipping up my cannabis-infused version. If you like this one, she also has a [wonderful desserts cookbook, also called Bravetart](https://www.amazon.com/BraveTart-American-Desserts-Stella-Parks/dp/0393239861), which you should check out.\n\n### Ingredients for Cannabis-Infused Peanut Butter Frosting\n\n* 4 oz butter* \n* 4 1/2 oz peanut butter* \n* 1 oz honey (maple syrup also works, or even molasses)\n* 1/2 tsp kosher salt\n* 1 tsp vanilla extract\n* 6 oz powdered sugar\n\n\n*You can either sub out part of the butter for cannabutter or some of the peanut butter for your infused version—or you can use a little bit of both. The possibilities are endless and it’s up to you, just remember to keep track of how much of the infused ingredients you use so you can more accurately dose your edibles.  \n\n### How to Make Cannabis-Infused Peanut Butter Frosting\n\n1.\tCombine everything _except_ the sugar in the bowl of a stand mixer. \n2.\tUsing the paddle attachment, mix on medium for 3 minutes. \n3.\tReduce speed to mix and add the powdered sugar slowly, a little bit at a time. \n4.\tOnce everything is in the bowl, go back to medium speed for about another 3–4 minutes until the frosting is creamy and light. Stop and scrap the sides of the bowl as needed to ensure everything is mixed thoroughly. \n\nWhichever way you choose, remember edibles have a lag time before you feel the effects, so start low and go slow. Pit both of the avocados and squeeze the avocado meat into a bowl. With a fork, mash the avocado until it’s the consistency you want (I like to leave some chunks in there for texture.). Season with salt, pepper and any other herbs you’d like, such as cilantro or red pepper flakes. Set aside.\n2. Shred your cheese with a grater. Place in a bowl and set aside.\n3. Shred your rotisserie chicken using whichever method is easiest for you. To heat your beans, put them in a small saucepan over low-medium heat. Stir often to prevent sticking.\n5. To heat your tortillas, warm them in the microwave, oven or in a pan on the stove. To keep them piping hot, take the stack of hot tortillas and wrap them in a clean cloth. You can place this stack on your table so that people can reach for a tortilla when they need one. Keeping them wrapped together means they’ll stay warm until eaten. \n6. Here’s where you decide how you want to serve up your sauces. Either dish out individual ramekins of the Greek yogurt, avocado and salsa for each person. Or you can put all of the sauces in big bowls out on the table for people to serve themselves. If you’re serving individual portions, mix each person’s desired amount of CBD into their ramekin of guacamole. You can also just mix the CBD into the main bowl of guacamole for people to serve themselves from. \n7. While the oven preheats, begin preparing the cookies.\n2.\tIn a large bowl, mix the butter, brown sugar and granulated sugar until light and fluffy. For easier mixing, use an electric mixer with the paddle attachment. \n3.\tAdd the vanilla extract to the fluffy sugar mix. \n4.\tAdd the eggs and mix until blended in. \n5.\tAdd the cocoa powder and mix again. Set aside.\n6.\tIn a separate bowl, sift together flour, baking powder, baking soda and salt. \n7.\tOnce sifted, add the flour mixture to the cocoa batter until combined. \n8.\tFold in the chopped white chocolate chunks until distributed throughout the dough. Set aside once mixed.\n9.\tTake a baking sheet and line it with parchment paper. Using an ice cream scoop or rounded tablespoon, scoop out the dough and drop them onto the baking sheet. \n10.\tAfter scooping out all of the dough, use a little water to dampen your fingertips and press on the dough to slightly flatten the balls.\n11.\tPlace the cookie sheet in the oven and bake for 15 minutes. Be sure to set a timer. \n12.\tRemove the cookies from the oven. They may appear underdone, but this is OK. \n13.\tLet the cookies cool briefly on the sheet, then transfer to a wire rack to cool completely. \n14.\tEnjoy. If you have a lower tolerance to CBD, use a smaller dose. If you aren’t sure about how much CBD to include, start low; a good starting dose is 5 mg.\n\n### How to Make CBD-infused Peach Crisp\n\n1. To get started, position a rack in the middle of your oven. Then, preheat the oven to 350 degrees F and grease your baking dish with butter. \n2. Slice your peaches into medium-sized slices. \n3. Make your filling: In a medium mixing bowl, whisk together the cornstarch and sugar until there are no lumps. \n4. Add the peaches, CBD tincture and lime juice, and toss the fruit gently in the mixture until coated. Add this mixture to your pre-greased baking dish. \n5. In a small saucepan, melt the butter on low heat, then remove it and let cool. \n6. Make your topping: In a large mixing bowl, combine flour, oats, sugar and salt, and stir until thoroughly combined. Then, evenly drizzle the vanilla and the melted butter over the mix and stir thoroughly. \n7. Sprinkle the topping over the fruit mixture, allowing some large clumps to remain intact, but also keeping the crumble relatively even. \n8. Bake the crisp for 30–35 minutes, or until the fruit juices are bubbling at the edges, and the topping is firm and golden brown.  \n9. When the crisp is done, let it cool on a cooling rack for at least 15 minutes. Serve and enjoy. \n\nYou can also keep the crisp covered in the refrigerator for up to one week. It's a group that’s focused on all these different outdoor activities: kayaking, climbing, hiking—and I was the chef. Part of the routine was once the young adults arrive for the week to these retreats, their way of kind of separating themselves from the chaos of dealing with cancer back home was to create this identity or nickname or something that's empowering. And that's basically how Chef T came about. Everybody loved it and I just kinda stuck with it for the last seven years. \n\n### Before you were a chef, you were a bodybuilder. Can you talk about how these two interests came together? \n\nI started out in the fitness industry as a personal trainer and [have been] personal training for probably over the last 20 years. And in between that I just felt like merging food with fitness was the ideal thing, since they go hand in hand. \n\nBodybuilding consists of a lot of cooking. You're constantly eating—eating becomes a job. [You’re eating] all these different types of food or the same food to meet your caloric intake so that you can maintain your weight or gain weight or whatever your goal is. As I got older, I realized how important nutrition is, along with health and lifestyle and how they all intersect. It was really important to me to learn more about food and how to be creative with it. \n\nI was really intrigued on the nutritional side and how food can heal our bodies on that level. So that's when I decided to go to culinary school. I went to the Natural Gourmet Culinary School, which focused on healthy cooking. They originally started out as a vegan school, then ventured out to vegetarian and slowly ventured out into grass-fed meats. \n\nI really did feel like [food] was a passion of mine, and I saw that just with my own transformation as a bodybuilder. I was amazed on how food can transform your body and you can look one way and need to transform your body and look another way. That alone, the science behind that, the anatomy behind that—the entire art of that was really intriguing to me. So, I felt like I needed these tools and studies to just learn a little bit more on how I can not only physically, visually transform, but also, how can I live a longer lifestyle by eating healthy?\n\nI believe our bodies are amazing—just the healing acts aspect of our bodies, how we can adapt, adjust to our environments. I think that's all form of art. Bodybuilding itself is a form of art, essentially the tools that you're using are food and exercise. Combining those two, making sure if you have the right ratio, you're able to sculpt your body into the sculpture that you want it to be.\n\nFor a while I laid low on the whole bodybuilding thing. It takes up a lot of your life socially, mentally, physically, and some may say spiritually as well. So, I took a little break and just really focused on learning about how other people from different cultures cook and how they approach food—[that] was pretty much what I really wanted to focus on over the last five years. \n\n### And when did cannabis come into your life? \n\nMy mom, four years ago, was diagnosed with triple negative breast cancer and she did not, at first, go the conventional route. She wanted to go all natural and she was doing really well. She actually went on a vegan diet for a little bit, then incorporated some grass-fed meats along the way. And then she was, she was doing actually doing really great and the tumor was actually starting to decrease in size. \n\nI can't remember when—it was maybe a few months after her diagnosis. We noticed that she was sort of at a standstill. My family and I, we did a ton of research, spoke to a ton of practitioners, naturopathic doctors, and we had a good friend in California who spoke highly of cannabis.\n\nI started to do research, and I was at the point that I think many people can relate [to]. You see your parent or loved one suffering, you're like willing to do anything. So, I started making cannabis oil at home, slowly introduced it to her, hoping that it could help with some of the side effects that she was dealing with. She eventually started getting radiation, so that was part of my concern as well during that time.\n\nI even tested it on myself before I gave it to my mom just to see how I felt. I wanted to make sure I was giving her the correct dosage and that she'd feel okay. \n\nI wish I had started maybe sooner. I can't go back in the past and change anything, but that started my whole journey—learning more about cannabis and how it can actually treat cancer survivors and other illnesses that are out there. \n\n### And what about yourself? Do you personally consume cannabis? \n\nI have my medical marijuana license here in New York, and I got it because of PTSD from dealing with cancer. After cancer treatment, I noticed over the year, especially as I got older, that even if I got a cold, my mind would play with me. I’d feel like something's coming back, and I deal with that often.\n\nWhen someone is diagnosed with cancer, it's all about that moment: what treatment this person's going to have. You're going to go through six months of chemotherapy or you’re going to go through two years of whatever treatment. Nobody really ever talks about the aftereffects. \n\nIt's like when a soldier goes out in war: You're out there; you're fighting for your country; you do your job; people pat you on the back. But they never really talk about what happens the next year when you're not out there on that battlefield. But in your case, this was a little different. What then, was your experience with fighting the cancer itself? \n\nWhen I was 15 years old, I was diagnosed with Hodgkin's disease. My family and I met with a nutritionist—at the time, cannabis, CBD (cannabidiol) was never brought up. Nutritional supplements were brought up like shark cartilage, Q10, garlic—and all of these supplements are great. They actually worked out really well [for me]. \n\nAnother aspect of that was my faith. I had a lot going on that created the balance to fight back this disease. And I believe when you combine the spiritual aspect of that, the physical aspect of it, and you surround yourself with good people, you have that love, that support that you need. You're able to fight back whatever you're dealing with in terms of disease or any trials and tribulations in your life.\n\n### So, it was much later that you began to consume cannabis to deal with the trauma that a cancer diagnosis can sometimes bring about?\n\nAs I got older, I realized that I dealt with flashbacks. If I walk into a hospital, I can still taste that sort of metal taste in my mouth. It's like a weird sensation—sometimes if I'm in a hospital setting, I get that because it reflects back to my past. And I think that's just with anybody that deals with trauma in life. \n\nAs I learned more about cannabis and CBD and how other people have used it for PTSD, I was really curious to how [cannabis] would affect me and my state as I got older. It's only as I got older, I got more nervous, and developed this sort of anxiety, which is so weird. \n\n[Cannabis] really does help me in terms of taking the edge off and just keeping me calm. It's really about the fear. There's the fear of it coming back and that fear, that back and forth mental game, can be exhausting for many people. I'm dealing with that fear. \n\nI think there is a place where cannabis can help with the aftereffects of dealing with trauma. And it was a healthy thing for me to talk about it in the group amongst other cancer survivors because I literally thought I was the only one because I never really talked about it. \n\nPeople should get themselves involved in some sort of cancer group or a group that deals with trauma, where they could come together and talk. I think that's a really healthy thing for everyone. And I do agree that prescribing cannabis or CBD, whichever works better for the person, can be also be something healthy that they can incorporate it into their lifestyle. \n\n### Let’s shift gears and talk something fun that you’ve done: “Frankenfood” on Spike TV. \n\nAfter I was done culinary school, I literally took my résumé and I sent it everywhere with my eyes closed. I just didn't even care. I really wanted to go on a show. I've done some acting before, and I love being in front of the camera. I love the experience of taking food, creating art around it and showcasing it in a very fun artistic kind of way. A lot of people in my family are artists. My dad—he's a painter, a drawer and my sister, she paints and draws, and I grew up painting and drawing as well. But food became sort of like my groove, I guess you could say.\n\nSo, “Frankenfood”—basically you're creating some outrageous dish or combination that would create some sort of wow factor. It was a lot of work for sure. I think I was working 20 hours a day for like a week straight, but it was a really great experience. I don't even remember how I came up with the cheesecake burger. But I have to tell you it is—I'm not saying this because I made it—but it was actually really good. \n\nIt was just a really cool experience to meet all the chefs and cooks from all over the world, just coming together and having a great time in the kitchen.\n\n### It sounds like food is your medium, your way of connecting with people and exploring the world. \n\nAbsolutely. I had the opportunity to go to Russia and Finland. I've been across Germany and France. And going to Panama, where my family's from on my mom's side, and all the Caribbean islands, I was able to develop a palate for many types of cuisines at a very young age. \n\nAnd I think that's really important. I think if more people learn about other people's cultures and community, we can start to relate to each other all on different levels. And I've had that experience at a very young age. Food is love; food is medicine; food is spiritual; there’s so much that's involved in food. \n\n### What do you have planned for the future? \n\nMy goal is to turn Simple Eats into online culinary school—not to compete with big schools, but to maybe that first step before culinary school. I really want to keep it as simple and easy—a place for people to just learn more about food, learn more about cooking at home, and hopefully create this experience of making just simple, easy meals—whether it's for themselves or their loved ones. \n\nSo that's my goal and I would love to incorporate some sort of cannabis and CBD in there—I'm sure that will come down the line as well.
